Salad Dressings

 

It is important to find at least two make at home salad dressings that you enjoy. Experiment until you find salad dressing recipes you love. Here are a few of my favorites. You can always dress a salad with lemon juice or flavored vinegars and sprinkle with nuts, seeds or avocado. Eat at least one large salad a day. 

Creamy Almond Vinaigrette Dressing

Ingredients:
2 cups unsweetened soy, hemp or almond milk
2 ounces of raw almonds (a little less then ½ cup). 
1/4 cup balsamic vinegar
2 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
1 clove garlic
1/8 cup raisins or currants (optional) 


Instructions: Blend ingredients in a high-powered blender until creamy and smooth.

 

Creamy Cashew Dressing

Ingredients:

1 ounce (about a ¼ cup) of raw unsalted cashews
1 cup of unsweetened plain soy milk 
1 tablespoon of Dijon mustard (I really like Vilux extra strong Dijon and Trader Joe's Dijon). 
1 clove of garlic
¼ cup lemon juice

Instructions: Blend ingredients in a high powered blender until creamy and smooth.

Modifications: You can adjust garlic and lemon juice to taste. Also you can replace lemon juice with any vinegar that you like, such as balsamic or pomegranate, to vary the flavor of the dressing.
